You won't buy any more sausages. Today I make homemade sausages just like in a shop. The ingredients are very simple.

Ingredients:
600 g pork
400 g of chicken fillet
16-20 g of salt per 1 kg of meat
50 ml ice cold water
Dried garlic, paprika, a pinch of nutmeg
Black pepper
Any favorite spices to taste

* The meat should stay 10-12 ° C during the entire preparation process. Put it in the fridge or freezer regularly. This will keep the sausage moist. *

* Cooking tips: *
1) If you have a thermometer, measure the water temperature. The water should be 80 degrees. The actual temperature in the oven is 80 degrees. To get 80 degrees, I set my oven to 100 degrees. All ovens are different. The water should be 75-80 degrees. The temperature in the finished sausage is 72 degrees.
Tips from other chefs:
2) You can put the sausage in the oven (without a pot of water) and bake it for 2 hours at 80 degrees. Put the container with water in the oven separately.
3) You can cook the sausage on the stove over very low heat and open the lid regularly. The water shouldn't boil. 2-3 hours.
4) You can cook the sausage in a slow cooker at a temperature of 70-80 degrees for 2-3 hours.
