Mutton Lucknowi Pulao
Recipe in English

Ingredients:
-Mutton boneless ½ kg
-Mutton bones 250 gms
-Pyaz (Onion) 2 medium
-Hari elaichi (Green cardamom) 3
-Badi elaichi (Black cardamom) 1
-Darchini (Cinnamon sticks) 2
-Laung (Cloves) 5-6
-Sabut kali mirch (Black peppercorns) ½ tsp
-Zeera (Cumin seeds) 1 tsp
-Saunf (Fennel seeds) 1 tbs
-Tez paat (Bay leaf) 1
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Namak (Salt) ½ tbs or to taste
-Pani (Water) 1 litre
-Badiyan ka phool (Star anise) 2
-Zeera (Cumin seeds) 1 tsp
-Saunf (Fennel seeds) 1 tbs
-Darchini (Cinnamon sticks) 3
-Hari elaichi (Green cardamom) 3
-Badi elaichi (Black cardamom) 1
-Dhania (Coriander seeds) 1 tbs
-Dahi (Yogurt) ½ Cup
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tbs
-Ghee ½ Cup
-Pyaz (Onion) sliced 2 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Tamatar (Tomato) sliced 1 (optional)
-Hari mirch (Green chilies) slit 4-5
-Chawal (Rice) Basmati 2 & ½ Cups soaked
-Mutton stock 3-4 Cups or as required
-Pyaz (Onion) fried

Directions:
-In pot,add mutton boneless cubes,mutton bones,onion,green cardamom,black cardamom,cinnamon sticks, cloves,black peppercorns,cumin seeds,fennel seeds,bay leaf,ginger garlic paste,salt and water,mix well and bring it to boil.
-Cover and cook on medium low flame until meat is tender (approx. 30-40 minutes).
-Take out cooked mutton meat and bones in a bowl and reserve for later use.
-Strain mutton stock and reserve for later use.
-In spice mixer,add star anise,cumin seeds,fennels seeds,cinnamon sticks,green cardamom,black cardamom and coriander seeds,grind & set aside.
-In yogurt,add red chili powder,black pepper powder,ground spices,mix well & set aside.
-In pot,add ghee and let it melt.
-Add onion and sauté until translucent.
-Add ginger garlic paste and mix well.
-Now add spiced yogurt,mix well and cook for 2-3 minutes
-Add tomato,green chilies and mix well.
-Add boiled meat with bones and mix well.
-Add rice,mutton stock,mix well and bring it to boil,cover and cook on low flame for 10-15 minutes.
-Garnish with fried onion & serve.

Directions:
-Pot mein mutton boneless cubes,mutton bones,pyaz,hari elaichi,badi elaichi,darchini,laung,sabut kali mirch,zeera,saunf,tez paat,adrak lehsan paste,namak aur pani dal ker ache tarhan mix karein aur ubal anay dein.
-Dhak ker halki darmiyani ancch per gosht gul janay tak paka lein (approx. 30-40 minutes).
-Cooked mutton gosht aur bones ko bowl mein nikal lein bad mein use kerna kliya.
-Mutton yakhni ko strain ker lein & bad mein use kerna kliya side per rakh dein.
-Spice mixer mein badiyan ka phool,zeera,saunf,darchini,hari elaichi,badi elaichi aur dhania dal ker grind karein & side per rakh dein.
-Dahi mein lal mirch powder,kali mirch powder aur ground spices dal ker ache tarhan mix karein & side per rakh dein.
-Pot mein ghee dal ker melt karein.
-Pyaz dal ker translucent hunay tak sauté ker lein.
-Adrak lehsan paste dal ker ache tarhan mix ker lein.
-Ab spiced dahi dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Tamatar aur hari mirch dal ker ache tarhan mix ker lein.
-Boiled gosht hadiyon ka saath shamil karein aur ache tarhan mix karein.
-Chawal aur mutton yakhni dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 10-15 minutes kliya paka lein.
-Fried pyaz dal ker serve karein.
