This gives your knives a 15 degree edge, which works for Misen and Japanese knives.  Some people put a 15 degree edge on their Western style knives too.  If you have this machine, it's not a bad idea, since you can resharpen any time.  But keep in mind that a 15 degree edge doesn't hold as long on Western knives, so if a friend brought you a knife that is 20 degrees and you know that they won't be able to resharpen for many months, I would hesitate to regrind their knife into 15 degrees.
