How to make a Kiev cake? Pastry-chef Yuri Volkov will teach how to bake the famous Kiev cake with crusts of fluffy hazelnut meringue with layers of Charlotte cream.

Many years ago, anyone whom fate brought to Kiev could not afford to return home without an original hazelnut meringue cake in a round box with green chestnut leaves drawn on the cakebox cover! Many pastry factories in Russia tried to bake their own version of the Kiev cake, but nobody succeeded in replicating the original cake from Kiev.

Today we can’t buy the “very same” meringue cake with nuts and sweet cream. But we will show you how to make the real Kiev cake at home.

The Kiev cake is a classic recipe - crispy cakes made of fluffy meringue with candied nuts, a light Charlotte cream and perfect harmony of tastes make the Kiev cake completely unlike other cakes.

Try to make a Kiev cake by repeating the video recipe from pastry chef Yuri Volkov and you will get exactly the same experience that I recall rom childhood! No store options for Kiev cakes can be compared to the Kiev cake based following my recipe.

The real Kiev cake recipe

Crusts Dough

Nuts 150 g
Sugar 150 g.
Protein 200 g
Sugar 50g
Flour 50 g.

Charlotte Cream

Milk 300 g
Yolks 4 pcs.
Sweet condensed milk 100 g.
Sugar 150 g.
Butter 400 g
Cocoa 20 g
