When I was growing up, most wedding receptions took place at home where professional cooks were hired to prepare the elaborate kalyana sadya or wedding feast. I was fortunate to have enjoyed many of these delicious meals including what is still to this day, the best chicken biryani I’ve ever tasted.

That is the recipe I’m sharing today. It is not a complicated recipe but it does take time. However, if you’re willing to make the effort, I guarantee it will be the best biryani you’ve ever eaten as well!  👩🏽‍🍳

Biryani Ingredients:
1.5 kg (3.3 lbs) chicken, cut into 1.5-inch sized pieces
3 cups basmati rice
2 tablespoons ghee + more for garnish

Chicken Masala:
1½ cups tomato, diced
½ cup onion, diced
(4) 1-inch long pieces of ginger, chopped
8 cloves of garlic, sliced
6 green chilis
3 sprigs of mint
12-15 stalks of fresh cilantro (¾ cup)

For Sauteing:
1 cinnamon stick
3 cardamom pods
4 whole cloves
3 medium onions, sliced
2 teaspoons salt
1 teaspoon turmeric powder
1½ tablespoons coriander powder
2 teaspoons garam masala
½ teaspoon black pepper powder
⅓ cup yogurt

Rice Spices:
5- 6 cups water (use less water if rice is fast cooking variety)
1 stick cinnamon
2 star anise
8 whole cloves
5 cardamom pods
3 bay leaves
1 teaspoon caraway seeds

Fried Onions:
1 large onion, thinly sliced
Enough oil for frying (approximately ½ cup)

Garnish:
15 cashews, split in half
½ cup raisins
Handful fresh mint and cilantro
¼ cup crushed pineapple (optional)
pinch of saffron threads (optional)
