In Malaysia, #CharHorFun is a typical street Chinese food. The name Char Hor Fun (Hokkien) is well-known for those in Penang/Pulau Pinang, whilst it is known as Wat Tan Hor (Cantonese) in Ipoh, the capital of Perak. Originally, fresh flat rice noodles/hor fun are used, but we don’t have the luxury of the fresh one here, hence resorting to use the dry hor fun which is soaked in hot water to soften it. As hawkers usually do, we stir-fried the rice noodles/hor fun separately with some light seasoning of soy sauce. As for the gravy, feel free to be adventurous with the ingredients.
Ingredients / Bahan-bahan:
150gm Flat Rice Noodles/Hor Fun/Kuey Teow
2 tbsp Vegetable Oil / Minyak Masak
1 tbsp Light Soy Sauce / Kicap Masin
1 tbsp Dark Soy Sauce / Kicap Manis
For Sauce/Gravy:
100gm Chicken Fillet / Isi Ayam
1 tsp Garlic / Bawang Putih
1 tsp Ginger / Halia
1 tbsp Oyster Sauce / Sos Tiram
1 tbsp Light Soy Sauce / Kicap Masin
1 tbsp Dark Soy Sauce / Kicap Manis
500ml Water / Air
½ cube Chicken Stock / Stok Ayam
½ tsp White Pepper Powder / Lada Sulah
½ tsp Salt / Garam
1 tsp Sugar / Gula
1 tsp Sesame Oil / Minyak Bijan
2 Tbsp Potato/Corn Starch + 1 tbsp Water
8gm Dried Mushroom / Cendawan Kering
5 pcs Straw Mushroom / Cendawan ‘straw’
2 stalks Mustard Leaves / Sawi
