NECTARINE PANCAKES:
-95g flour
-1 TSP baking powder
-60g soy yogurt
-180ml oat milk
-1 chopped nectarine
Hazelnut syrup:
-1 TBSP hazelnut butter
-1 TBSP maple syrup
Combine all ingredients and fry the pancakes on both sides until golden brown.
Serve with more nectarine and hazelnut syrup.
PESTO VEGGIE WRAP:
Fry 1 zucchini in slioced smoked tofu an season to taste.
Add to a wrap with vegan pesto, lettuce, sun dried tomatoes and vegan feta.
Roll and grill.
BANANA MILKSHAKE:
-1 big frozen banana
-a handful ice cubes
-1 TBSP hazelnut butter
-1 TBSP vegan chocolate protein powder
-1 cup (250ml) plant milk
BLEND and enjoy
DINNER:
I cooked rice and soy chunks.
Fry the soy chunks with onion, garlic and ginger.
Season with dark and sweet soy sauce and add lime leaves.
Make a gochujang sauce (see last video).
Serve in steamed chard leaves and with carrots.
