Butterflied Spicy Mesquite Roast Chicken - Video Recipe

How to make seriously tasty roast chicken.  The seasoning is my favourite blend, the mesquite won't overpower the chicken and the skin is extremely crispy.  Give it a go!

Ingredients:

Whole chicken
Olive oil

Chicken spice rub (enough for 2 chickens):

1 ½ tbs salt
1 tbs sugar
1 tsp ground black pepper
1 ½ tsp cayenne pepper (adjust to your taste, this will give a medium amount of heat)
1 tbs paprika
1 tsp dried thyme
½ tsp ground ginger
1 tsp Chinese five spice
