chickpea salad for weight loss

Chickpeas are combined with juicy tomatoes, crisp cucumbers, dill, all tossed in an easy homemade lemon dressing.

Dressing Ingredients

1/4 cup extra virgin olive oil
Juice of 1 lemon
2 tablespoons red vinegar
2 tablespoons  mustard
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon oregano

Salad Ingredients—

2 cans chickpeas (drained and rinsed)
1 orange bell pepper

1. In a large bowl combine all the ingredients for the dressing and whisk to combine.
2. Chop all the vegetables and herb. Slice the Kalamata olives in half, drain and rinse the chickpeas.
3. Add the chickpeas Add remaining salad ingredients to the dressing and gently toss to combine and enjoy!

3 Persian cucumbers
2 cups cherry tomatoes
1/2 cup Kalamata olives
1 cup chopped dill
1 cup chopped parsley
