White Curry

Ingredients For Curry Paste:
Cashews    100gm
Melon seeds    100 gm
White sesame seeds  1 tbsp
Poppy seeds    1 tbsp
Desiccated coconut  ½ cup
Whole coriander seeds   1 tbsp
Whole cumin seeds   1 tbsp
Fresh coconut    half
Green chilies    4-5 big
Oil      3 tbsp
Flour     2 tbsp
Curry leaves    9-10
Ginger garlic paste   1 tbsp
Salt      1 tsp
Black pepper   ½ tsp
Chicken soup    1 cup
Lemon juice    1 lemon
Oil     1 tbsp

For The Chicken:
Chicken     ½ kg
Ginger garlic paste   1 tbsp

For Garnish:
Oil     1 tbsp
Butter     1 tbsp
Slit green chilies    4-6 large

Method:
Dry roast and then grind the cashews, melon seeds, white sesame seeds, poppy seeds, desiccated coconut, whole coriander, and whole cumin. Grind the coconut with large green chilies. Heat oil add flour sauté on low and then add the ground masala and coconut paste. Add curry leaves. Let this paste roast on low heat till its changes colour and oil comes out of it. Then add ginger garlic paste, salt and pepper and chicken and sauté, add chicken soup and let cook. Add lemon juice.
Just before serving, heat a spoonful of oil and butter and sauté slit green chilies in it. Pour it on top of the hot curry and serve with white rice.


Andey Ki Piyosi

Ingredients:
Eggs (separated)   5
Cardamom powder   1 tsp
Whole dried milk (grated) 175 gm
Semolina    2 tbsp
Brown sugar    175 gm
Coarse Almond powdered 1/2 cup
Clarified butter   as required

Method:
Beat yolks and add in the sugar until creamy. Mix in powdered almonds, semolina, cardamom, whole dried milk and clarified butter. Whip egg whites to form peaks adding a pinch of salt while doing so. Fold the egg yolk mixture into the whipped egg whites, don't overwork, you want to retain air in it. Grease a baking dish with clarified butter and pour in the mixture. Place in a water bath and bake in for around 40 minutes. Cool, cut into desired shapes
