INGREDIENTS:

FOR GATTA:
* Gram Flour (बेसन) - 1 big bowl
* Carom seeds (अजवाइन) - 1/4 tsp
* Cumin seeds (जीरा) - 1/2 tsp
* Green chili (हरी मिर्च) - 1
* Dried Fenugreek Leaves (कसूरी मेथी) - some
* Coriander leaves (धनिया पत्ती) - some
* Onion (प्याज) - 1 big chopped
* Turmeric powder (हल्दी पाउडर) - 1/4 tsp
* Salt (नमक) - as per taste
* Chili powder (लाल मिर्च पाउडर) - 1/2 tsp
* Coriander powder (धनिया पाउडर) - 1/2 tsp
* Roasted Cumin Powder (भुना जीरा पाउडर) - 1/4 tsp
* Oil (तेल) - 1 tbsp
* Water (पानी) - as required
* Oil (तेल) - for frying

FOR GRAVY:
* Oil (तेल) - 2 tbsp
* Dry Whole Red Chili (सूखी साबुत लाल मिर्च) - 2
* Cumin seeds (जीरा) - 1/2 tsp
* Asafoetida (हींग) - 1 pinch
* Tomatoes (टमाटर) - 2
* Ginger (अदरक) - 1 inch
* Garlic (लहसुन) - 4-5 pieces
* Onion (प्याज) - 2
* Green chili (हरी मिर्च) - 1
* Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर) - 1/2 tsp
* Curd (दही) - 1/2 cup
* Turmeric powder (हल्दी पाउडर)
* Coriander powder (धनिया पाउडर) - 1 tsp
* Red Chili powder (लाल मिर्च पाउडर) - 1/2 tsp
* Garam Masala (गरम मसाला) - 1/4 tsp
* Roasted Cumin Powder (भुना जीरा पाउडर) - 1/2 tsp
* Mango powder (अमचूर पाउडर) - 1/2 tsp
* Salt (नमक) - as per taste
* Dried Fenugreek Leaves (कसूरी मेथी) - some
* Water (पानी) - as required
* Coriander leaves (धनिया पत्ती) - for garnishing

RECIPE:

For Gattas, take some sieved Gram Flour in a bowl, put some Carom Seeds, Cumin Seeds, finely chopped Green Chilies, some crushed and roasted Dried Fenugreek Leaves, Coriander Leaves, finely chopped Onion, Turmeric Powder, Salt, Red Chili Powder, Coriander Powder, Cumin Powder and some Oil in it and mix them all. Then bind the dough by adding Water in it.
Apply some Oil in your hands and make the rolls. Keep some Water for boiling and put the ready rolls in the boiling Water and cover them for 10-12 mins and then take out them and cut them in pieces and deep fry all the Gattas.
For Gravy, chop some Tomatoes and grind them. Then chop some Onion, Garlic, Ginger, Green Chilies and grind them as well.
Put some Oil in a pan, then put Dried Whole Red Chilies, Cumin Seeds and Asafoetida in it.
Then put the Ginger, Garlic, Onion and Green Chili Paste in it and roast it lightly. Then put some Kashmiri Red Chili Powder and ground Tomato paste. Turn the flame medium and let it to be cooked till it releases Oil.
Take some Curd, put some Turmeric Powder, Coriander Powder, Red Chili Powder, Garam Masala Powder, Cumin Powder, Mango Powder and some Salt and then put this mixture in the pan for enhancing the taste. Let it to be cooked with the Curd and then put the fried Gattas in it and roast the Gattas with the Masala, put some Dried Fenugreek Leaves and some Water in it then cover it and cook it on medium flame for 6-7 mins.
In this way, Gatte Ki Sabzi will get ready. Garnish it with some Coriander Leaves and serve it.
