It's high time to enjoy Authentic Sri Lankan Banana Leaf Rice & Curry ☺ If you had not tasted it, Oh YES this is a MUST to try at home. It's easy, a bit of a little time but always freeze the extras in the freezer & already saved time to cook for some other days. Here I would love to share, how I prepare these goodness at home so I don't miss my local food at all. Yes it's not easy to find all the ingredients but will manage to bring on what I always want.. This video shows all in detail & in future video I will share how I enjoy all my frozen Banana Leaf Rice & Curry Meals. So I suggest, when you are able to get the Banana leaf from your local grocery, plan this meal & enjoy as your heart desires.

Ingredient for Dried Shrimps Sambol (Koonisso Mallum):

First this first - 4 Banana Leaves
1 Freshly grated Coconut
1/2 Onion, 2-3 Garlic, 1 inch Ginger
Some Curry leaves
Mustard - 1/2 Tsp
Salt to taste
Coconut Oil - 2-3 Tbsp
Dried Shrimps - 1/3 cup
Water as needed
Tomato
Green Chilli
Turmeric, Chilli flakes to taste
Squeeze some Lime if needed

Ingredient for Potato & Dried Sprats Curry (Ala Halmasso Maluwa):

3 Potatoes
Dried Sprats - 1/3 cup
Brindle Berry - 2-3
Fenugreek, Cumin, Chilli - each 1/2 Tsp
Ginger, Garlic - 2 Tbsp
1/2 Onion, Green Chilli - 2
Curry leaves, Salt to taste
Homemade Curry powder, Chilli  - each 1 Tsp
Turmeric - 1/2 Tsp
Water as needed
Thick Coconut Milk - 1/2 cup, increase as needed

Ingredient for Tempered Green Thampala (Thampala Theldala):

Coconut Oil - 2-3 Tbsp
1 Onion, Chilli -3,
Curry leaves, Garlic - 3
Maldive Fish - 1 & 1/2 Tbsp
Salt to taste
Chinese Spinach (Thampala) - 1 big bowl (cleaned & washed)
1/2 Tomato
Chilli flakes - 1/2 Tsp

Ingredient for cooked White Rice in Rice cooker:

White Rice - 4 cups
Salt to taste
Water - 8 cups

Ingredient for Thick Dhal Curry (Paprippu Hindala):

Coconut Oil - 2-3 Tbsp
Mustard, Cumin - each 1/2 Tsp
Garlic - 5 cloves
1 Onion, Curry leaves
Chilli - 3, Salt to taste
Turmeric, Homemade Curry powder - each 1 Tsp (recipe mentioned below)
Chilli - 1/2 Tsp
Dhal - 2 cups (washed & soaked for 10 Min)
Water as needed
Coconut Milk - 3/4 cup, increase as needed

Ingredient for Tempered Lady Fingers (Bandakka Theldala):

Coconut Oil - 2 tbsp
Lady Fingers - 1 cup (cleaned & washed)
Salt to taste
1 Onion, Chilli - 3, Curry leaves
1/2 Tomato, Turmeric, Chilli flakes - each 1/2 Tsp

Ingredient for Beetroot Curry:

1 large Beetroot
Homemade Curry powder, Chilli flakes, Turmeric - each 1/2 Tsp
Chilli, Garlic - each 3
Salt to taste, Curry leaves
Water as needed
Coconut Milk - 1/2 cup

Ingredient for Brinjal Moju (Batu Moju):

Coconut Oil - 2-3 Tbsp
Shallots - 5-6
Chilli - 2
Dried Sprats - 1/2 cup
1 large Fried Brinjal
Chilli flakes - 1/2 Tsp, Salt to taste
Vinegar - 2 Tbsp
Honey - 2 Tbsp, may add Sugar
