Whenever I get sick, mom always makes congee. Now I am doing the same for my whole family. It's also a great baby food for infants. My sons were fed this when they turned 4-5 months old. I often mix in mashed vegetables for extra nutrition and flavors. The recipe I am introducing here is a Korean style congee (often referred to as juk) and served with Chinese fried crullers on the side. In fact, there're many variations across eastern Asian countries. Congee is highly customizable and you can use any ingredients in your fridge and get creative with it. I love making congee in my Instant Pot. Within 45 minutes, you get to eat a bowl of steaming hot and creamy rice porridge. Chinese like to use jasmine rice (long grain rice). I found short grain rice makes the creamiest and thicker congee. So even when I make Chinese style congee, I prefer to use short grain rice. I like my congee a little bit creamy but not too thick, so the rice to water ratio is 1:6. If you like it a little bit thicker, feel free to adjust the ratio. For vegetarian, you can simply omit the meat and use kombu dashi (dried kelp based stock) instead of chicken broth. Add any other vegetables for more flavors.
