Today we are cooking pasta Carbonara!

For 2 servings:
* Bacon/pancetta - 200 g
* Shallots - 15 g
* Garlic - 2 cloves
* Thyme - 5 g
* Pasta - 200 g
* Parmesan cheese - 40 g
* Egg yolk - 6 pieces
* Butter - 15 g

Cut the bacon into small rectangles.
Finely chop the shallots.
Heat the pan over high heat without oil, throw the bacon on it and fry, stirring occasionally, until golden brown. Then add the onions and fry them together over medium heat. After a minute, add the garlic cloves, fry for another minute and add the thyme.
We separate the egg yolks from the whites. Cook the pasta until it is "al dente".

We throw the pasta into a frying pan with bacon, pour a little water from the pasta, mix, remove the garlic and thyme so that they do not come across during meals. If you cooked with pancetta, then there will be a lot of fat, and you do not need to add water.
Turn off the heat, throw in the yolks and stir constantly. If the temperature was not enough, and the yolks did not turn creamy, then stir over low heat, add the butter, and continue to stir until the butter dissolves. Season the finished pasta with pepper.
