PLEASE NOTE: though these are a lot lower in carbs than standard fries, they are still rather high in carbs for a side/snack. Eat with caution.
Otherwise, these are pretty darn good, though they do go soggy very quickly so you need to either eat them pretty much as soon as they come out the oven OR enjoy them soggy, which isn’t hard because they’re nice however they come to be honest.

| The Recipe |

INGREDIENTS:
- 1 large (about 700g) Swede/Rutabaga, peel and cut into thin sticks
- 2 tbsp Coconut Oil (melted), Avocado Oil or Animal Fat (melted) - DON'T USE OTHER OILS, THESE HAVE HIGH SMOKE POINTS!
- 1/2 tsp Salt
- A sprinkle of Black Pepper
- 1/2 tsp Seasoning of your choice (eg. Paprika, Taco Seasoning, Creole Seasoning, Thyme etc)

METHOD:
1. Preheat oven to 220c/425f.
2. Prep your swede/rutabaga and place in a large bowl. Then, in a small bowl, mix together oil, salt, pepper and seasoning.
3. Add the oil mixture to your veggie sticks and mix well to coat them in the oil.
4. On a large prepared baking sheet (covered with parchment/greaseproof paper or a silicone mat) place the "fries" evenly across the baking sheet, make sure they're not too bunched up.
5. Bake for 20-30 minutes - This will depend on how thick your “fries” are and how many are on your sheet. Check them every 10 minutes and turn the sheet when needed.
