🔔How to make Creamy cauliflower and cavolo nero: black kale gratin for vegetarian diet #asmrcooking  

👉Ingredients:
• 1 medium cauliflower, cut into small florets
• 200g cavolo nero (also known as black kale), stems removed
➡️For the sauce:
• 1 shallot, finely chopped
• 2 garlic cloves, finely chopped
• 1 teaspoon dried oregano
• 100ml dry white wine
• 300ml double cream
• 100ml milk
• 100g grated Parmesan cheese
• Sea salt flakes
• Ground black pepper
• Olive oil
➡️For the topping:
• 30g panko breadcrumbs
• 30g grated Parmesan cheese
• 1/4 teaspoon ground white pepper
➡️Garnish:
• Fresh parsley, finely chopped
🍽️serve 2
Method:
1. Heat an ovenproof frying pan over medium heat and add some olive oil. Sauté the chopped shallots and garlic until fragrant. Add the dried oregano, stir well, and pour in the dry white wine. Reduce the wine by half, then add the double cream.
2. Stir in the milk and grated Parmesan cheese and continue to stir until the sauce thickens. Season the sauce with sea salt flakes and ground black pepper to taste.
3. Place the prepared kale and cauliflower into the pan, arranging them evenly. Season the vegetables with sea salt flakes.
4. In a separate bowl, mix the panko breadcrumbs, grated Parmesan cheese, and ground white pepper. Sprinkle this mixture over the cauliflower and kale. Transfer the pan to an oven preheated to 180°C (with a fan) and bake for approximately 45 minutes or until the gratin is fully cooked.
5. Once the gratin is out of the oven, sprinkle some finely chopped fresh parsley on top for garnish, and it's ready to be served.
