4 artichokes
2 eggs
1 shallot or small onion
1 garlic clove
1 tsp salt
Pepper to taste
1 tsp sugar
1 tsp mustard
1 tbsp tarragon, dried or fresh
1 tsp chervil, dried or fresh (optional)
4 tbsp olive oil
2 tbsp vinegar
1 tbsp lemon juice
1 tbsp water

Directions/ how to cook artichokes:

1. Cut (or break off) the stems of the artichokes and peel them
2. rinse artichokes and stems thoroughly
3. cover the artichokes with water, weigh them down with a plate or a pot lid and cook them. The cooking time can be 30 - 50 minutes, depending on the size of the artichokes. The artichokes are done when the leaves can be pulled out any without resistance.
4. Place the eggs in a small saucepan, cover them with water and cook them for 8-12 minutes. As the eggs are hard boiled, stain the water and let the eggs cool.
5. In the meantime, finely chop 1 garlic clove and 1 shallot.
6. Peel the eggs.
7. Blend the eggs with salt, pepper, sugar, mustard, tarragon, chervil, olive oil, vinegar, lemon juice and water in a food processor.
8. Combine the egg mixture with the chopped garlic and shallot
9. Drain the artichokes upside down in a colander
10 Serve the artichokes with the dipping sauce.
