How to make Chettinadu Masala powder

Chettinadu is a region in the southern state of India, Tamil Nadu. Chettinadu cuisine uses variety of spices and dishes are made with ground masala. Chettinadu masala powder is a basic masala used in many dishes. Click on "show more" below for detailed ingredients and recipe.

Ingredients:
4 tbsp of fennel seeds;
1 star anise;
2 tsp poppy seeds;
2 tsp cumin seeds;
5 tbsp coriander seeds;
6 dried red chillies (add more if you like it spicy);
14 cloves;
few pieces of cinnamon;
3 tsp peppercorn;
1 tsp mustard;
1 tsp fenugreek seed;
7 cardamom pods.

Add cloves, star anise, cardamom, cinnamon to a pan and saute them well (keep the flame on low to medium).
Add coriander seeds, fennel seeds, peppercorn, mustard seeds, cumin seeds, fenugreek seeds and saute for few minutes.
Add dried red chillies and poppy seeds (careful with poppy seeds as they can burn easily).
Once the spices cool down, grind it to a fine powder in a mixer or blender.
Store the mix in an air-tight container and use it to make delicious chettinadu dishes.
