Potato empanadas, the easiest and most delicious potato empanadas, using corn flour. One of the appetizers that are not lacking in my town are empanadas and they are super easy to prepare, you can fill them like me, using potatoes or just with cheese, meat or whatever you like the most.

⏩Ingredients for potato empanadas:
2 1/2 Cups of Nixtamalized Corn Flour (310 gr).
1/2 tsp of Salt.
1 Tbsp Tufted Rice Flour (13 gr).
1/2 to 3/4 Tbsp of all-purpose wheat flour (7 gr).
360 to 400 ml of Hot Water, (I need 360 ml 1 1/2 Cup + 2 Tbsp).

Mashed potatoes:
500 gr of Potatoes (4 Potatoes).
1 to 2 Tbsp Mayonnaise.
50 to 100 gr of Butter Cheese or Chiapas Cheese (You can substitute with cotija or Feta cheese).

⏩Tips and Recommendations:
1. Remember to add the water little by little so as not to overdo it because not all flours absorb the same amount of liquid, I used the Harimasa brand.
2. You can fill them with whatever you like, I like it with mashed potatoes, but you can use cottage cheese, chicken, ground beef, etc.
