How to make Nasi Lemak Rice with Coconut Powder | Coconut Rice | Simple and Light Version

Nasi lemak is considered a national dish of Malaysia, traditionally served for breakfast. Its literal translation means ‘rice’ and ‘fat’. However, it does not mean fat rice! The word lemak refers to the creaminess/richness of the coconut milk.

There are many variations to this dish, but the core to nasi lemak is fragrant coconut and pandan infused rice, ikan bilis sambal (anchovy chilli sauce), slices of cucumber, toasted peanuts, and hard-boiled egg. You can also include a serve of curry, rendang, fried chicken or acar (vegetable pickle) on the side!

In this video, I share a simple, 'light' version that you can easily make at home in a rice cooker using coconut powder. I personally prefer powder because once a can or box of coconut milk has been opened, you generally have a few days until it goes off, resulting in the left overs being discarded. I don't really want to store the excess coconut milk in the fridge, and then have to think about how I can use it up for other dishes. Moreover, coconut powder packets take up less space in my already packed pantry.

Below is the recipe:

Pandan Flavoured Coconut Rice Recipe (Nasi Lemak)
Serves 5-6

Ingredients
3 rice cups of long grain basmati rice (washed)
3.5 rice cups of water mixed with one packet (50g) of coconut powder (*if you want a richer coconut taste, you can put in 1.5 or 2 packets of coconut powder)
2 tbsp extra virgin coconut oil (you can replace this with 1 tbsp cooking oil if you don't have coconut oil)
2 - 3 pandan leaves twisted (screwpine leaves)
1 tbsp shredded lemongrass (or 1 stalk of lemongrass, bruised)
½  tsp salt  
2-3 drops pandan flavouring (OPTIONAL - this also turns the rice green)
1 inch ginger (bruised) OPTIONAL

*Note: This is a personal preference. The more coconut, the creamier (more lemak) the taste. 1.5 packets = 75g, 2 packets = 100g of powder. They also sell coconut powder in 250g and 1 kg bags.

Method

1. Wash raw rice 4-5 times (e.g., until water is completely clear)
2. Add all ingredients above in the rice cooker and press cook
3. When ready, rake the rice with a nonstick rice scoop
4. Leave on keep warm
4. Scoop rice into any shaped bowl when ready to eat
5. Serve hot on a plate lined with banana leaf
