Ingredients:

Basmati Rice: 500 grams
Salt: 3 teaspoons
Cardamoms: 2
Cinnamon sticks (small): 2
Black cloves (lavang): 2
Mint leaves: a handful
Chopped coriander: a handful
Onions (big): 2
Cashews: 50 grams
Clarified butter (pure ghee): 2 tablespoons
Oil for frying

Procedure:

1. Soak rice for 30 minutes.

2. After 30 minutes, add 2 litres of water to a cooking pan.

3. Add salt, slit cardamoms, small sticks of cinnamon, black cloves, mint leaves and chopped coriander.

4. Close the lid till the water comes to boil.

5. Meanwhile to a frying pan, add oil for frying.
6. When the oil is hot, add thinly sliced onions.

7. Fry till the onions turn light brown and crispy, keep this aside.

8. Into the same oil, fry cashews till golden brown and keep aside.

9. When the water comes to boil, add soaked and drained rice.

10. Close the lid. Stir at times.

11. Semi-cook the rice and drain the water.

12. Add clarified butter or pure ghee, close the lid and cook the rice until tender.

13. Fluff the rice to remove the lumps and dish out.

14. Garnish with fried crispy onions and cashews.

Kaju Rice is Ready.
