How to make khao piek sen noodle and chicken broth

Khao piek noodles:
4-5 cups of hot boiling water
1 bag rice flour (red bag)
1 bag tapioca starch (green bag)
Add one cup of water at a time
Extra bag of tapioca starch for rolling and cutting

Chicken broth:
2 chicken breasts
1 1/2- 2 gallons of water
2 tbsp kosher salt
1/4 cup chicken powder
1 small piece of rock sugar
1 onion
1 big piece of ginger
2 stalk of lemongrass
1 garlic bulb

Topping:
Cilantro
Green onion
Fried garlic and onion
Fish sauce
Sriracha
Chili oil
Lemon/ lime
