Learn how to make typical odia style Dahi Baigana which is one of the most popular side dish in Odisha. It is very easy to make with fewer ingredients. This recipe is made with curd, brinjal / eggplant, mustard oil and with some spices. It can be served with plain Rice or Rotis.
Ingredients:
1. Thick curd - 1 cups (250gm)
2. Brinjal / Eggplant - 2 (400gm)
3. Turmeric powder - 1/2 tsp
4. Kashmiri red chili powder - 1/2 tsp
5. Cumin powder / jeera powder - 1/2 tsp
6. Salt as per taste
7. Sugar - 1 tsp or add as required
8. Black salt - 1/2 tsp or add as per taste
9. Pancha phutana / panch phoron - 1 tsp
10. Dry red chili - 2 or add as requred
11. Green Chilli – 2 nos.
12. Curry leaves - 2 tsp (Use fresh leaves)
13. Mustard Oil - 2 tsp
14. Hing – 1 pinch
15. Zinger – ½ inch
16. Mango Zinger(Optional)
