Today at Starbucks, I made 'Palmier', which is well known as a heart pie.

A delicious palmier full of extreme crispy and sweetness and buttery flavor,
The process of folding and unfolding in 4 times of processes are a bit cumbersome, but it's really the best homemade baked confectionery when you make and eat it.

If you want to make a little more layer of palmier, according to your preference,
You can make it up to 6 times of processes.

It's weak to moisture, so seal it well and leave it at room temperature to eat within 2-3 days.
For other long-term storage, seal it well and keep it frozen. (Within 2 weeks)

+) Actually, the dough for the pie is the most delicious the day it is baked. You can enjoy the pie dough more deliciously if you put it in the refrigerator (when stored for a short period) or in the freezer (when stored for a long period), then take it out and bake it immediately after a brief defrosting time.

[Success point on Palmier]

1. When I made Palmier today, I made half and half cake flour and bread flour.
The properties of the cake flour and the bread flour were blended together to create a texture and volume to suit your taste. You can make pie dough using any type of flour, soft flour, strong flour, or gravity flour. You can make it by blending several powders according to your preference.

2. Temperature is the most important when making pie dough!
Please proceed with the kneading while checking both the temperature of the working environment and the temperature of the dough.

[how to make]

1. Prepare by dissolving salt in cold water.
2. Sift the cake flour into a bowl and add the Bread flour. Add cold butter and mash with your hands to mix well.
3. Pour the salt water from 1 into 2 and start kneading.
4. If it clumps into one lump and shows a little elasticity, collect it in a circle and let it rest in refrigeration.
5. After gently touching the dough, let it rest in refrigeration for at least half a day.
6. Trim the amount of butter by pushing it flat to a size of 18cm x 18cm.
7. Push the half-day rested dough into 25cm x 25cm squares.
8. Tilt the butter 45 degrees on the dough pushed into squares, and wrap the butter with the dough.
9. Push the dough and butter well in one direction, and fold it into 3 parts when it is about 3 times longer than the original.
10. Complete this process 4 times.
(For 3 times and 4 times, sprinkle a little sugar on the finish and fold into 3 parts)
11. Push the finished dough into a size of 22cm x 40cm, and cut it out both edges.
12. Fold the dough in half, check the position of the center line, spray a little water, and sprinkle a little sugar.
13. Fold the dough leaving 0.5-1cm from the center line, and sprinkle a little water and sugar on it.
14. Finally, layer the dough in half.
15. Put the dough in the refrigerator for a while and harden it.
16. Cut the hardened dough into 1-1.2cm thick.
17. Cover the sugar evenly on the cut dough, and bake in the oven, spaced on an oven pan.
(28-30 minutes at 180-190 degrees)
18. In the middle of baking, turn the dough upside down so that it is baked in a uniform color.

120 g of water

180 g butter
