I found the perfect alternative to chebureks - Azerbaijani qutabs. A delicate, soft flatbread made from unleavened dough with a juicy filling of stretchy cheese and fragrant herbs. They should be fried in a dry pan, and we'll brush them with butter to bring out their full flavor.

Ingredients:
For the dough
🔸 Wheat flour - 400 g
🔸 Salt - 1 tsp
🔸 Vegetable oil - 2 tbsp
🔸 Warm water - 220 ml

For the filling
🔸 Cheese - 300 g
🔸 Herbs - 100 g
🔸 Salt - 0.5 tsp
🔸 Ground black pepper - 2 pinches

👩‍🍳 Instructions:
1. Dissolve the salt in warm water. Add the sifted flour and vegetable oil.
2. Knead a soft, elastic, and non-sticky dough. If the dough sticks to your hands, add a little more flour.
3. Cover the dough with a bowl and let it rest for 20-30 minutes.
4. Prepare the filling from cheese and herbs. Grate the cheese. I used mozzarella, but you can substitute another cheese. Rinse and finely chop the herbs.
5. Divide the dough into equal parts and roll each into a ball. Cover the balls with a towel and let them rest for 10-15 minutes. The size of the balls depends on the diameter of the pan. My pan is 24 cm in diameter, so I divided the dough into 15 parts, about 45 g each.
6. Roll each ball into a thin flatbread 2-3 mm thick. Place 1-1.5 tbsp of filling on half of the flatbread and spread it evenly.
7. Cover the filling with the other half of the flatbread. Press the filling with your palms to release excess air and press the edges with your fingers to seal the qutabs. If necessary, trim the excess dough.
8. Fry the qutabs in a preheated dry pan over medium heat until golden brown, about 2-3 minutes on each side.
9. Place the finished qutabs in a deep container, generously brush with butter, and cover with a lid. Let them sit for 10-15 minutes to become soft and juicy.
