Mutton Namkeen Karahi:
Ingredients
Mutton with bone (boiled) 500 gm
Lamb fat 100 gm
Clarified butter ¼ cup
Garlic chopped 1 tbsp
Tomato half 4- 5
Salt as required
Black pepper crushed 1 tsp
Yogurt 1 tbsp
Green chili big julienne 2 medium
Ginger julienne 1 tbsp
Coriander chopped 1 tsp
Method
Karahi men ghee garam ker kay mutton or lamb fat ko namak or lehsan kay sath fry ker lain ab timater dal ker 5 minutes kay liye dhakan laga ker dum per chor den ab dhakan hata ker karahi ki khoob bhunae karen yahan tak kay timater bikul mashed hojae phir 1 chamcha dahi dal ker hari michen or adrak dal ker mazeed bhunae karen kay ghee or gravy alag hojae. Phir dhanai or adrak dal ker serve karen.
Lettuce Wraps:
Ingredients
tikka boti or seekh kabab 1 cup
Tortilla bread 2 to 3
Mayonnaise ¼ cup
Mustard paste 1 tbsp
Honey 1 tbsp
Iceberg lettuce as required
Onion julienne 1 large
Tomato julienne 1 large
Olives 10 to 12
Butter paper 3 -4
Method
Ek mixing bowl men mayo, mustard paste or honey dal ker mix ker kay sauce ready ker lain. Ab tortilla per sauce laga ker laga ker ice berg lagaen phir chicken tikka boti dal ker tomato, onion or olive rakh ker phir se sauce lagaen or wrap bana lain phir grill pan ko khoob garam ker kay wrap ko dono janib se grill mark de ker serve karen.
Dhaka fish:
Ingredients to marinate
Fish fillet julienne 1 cup
Garlic paste 1 tbsp
Green chili paste 1 tbsp
Lemon juice 2 tbsp
Salt as required
Red chili powder 1 tsp
Chat masala 1 tsp
Cumin crushed 1 tsp
Water few drops
Ingredients to coat
Flour ½ cup
White sesame seeds 1 tbsp
Red chili powder 1 tsp
Oil for frying
Ingredients to tarter sauce
Mayonnaise ¼ cup
Vinegar 2 tbsp
Cucumber fine chopped 1 tbsp
Carrot fine chopped 1 tbsp
Salt as required
Method
Fish marinade ker nay kay liye ek mixing bowl men fish or tamam ajza dal ker 1 hour kay liye fridge men rakh den.
Ab ek mixing bowl men maida, lal mirch or till dal ker achi tarhan mix ke lain.
Ab marinated fish ko coating mix se coat ker kay medium flame per oil men fry ker ke lain jab golden color ajae or fish crispy hojae to nikal ker tarter sauce kay sath serve karen.
Tater sauce bananay kay liye ek mixing bowl men mayo or tamam ajza dal ker mix ker lain.
