Ingredients For Butter Murukku:
1 Cup Rice Flour
3 tbsp Chickpea Flour
2 tbsp Roasted Gram Flour/Pottukadalai
1 tbsp Butter
1 tsp Black Pepper, Crushed
1 tsp Sesame Seeds
1 tsp Cumin seeds
½ tsp Asafoetida, adjust to suit your taste
Salt to taste
Required water to knead the dough
Required Oil to deep-fry

Ingredients For Pottukadalai Murukku:
1 cup Rice Flour
¼ Cup Roasted Gram Flour (Pottukadalai/Putnalapappu)
½ tbsp Butter
1 tsp Cumin seeds
¼ tsp Asafoetida or a little less to suit your taste
Salt to taste
Required water to knead the dough
Required Oil to deep-fry

Today, I'm sharing 2 Easy Murukku Recipes With Rice Flour for beginners. Make crunchy murukku in 10 minutes without any hassle, Perfect snack for Diwali or enjoy as an evening snack!!
Murukku is a traditional savoury snack popular in India, especially in South India. This is definitely one of the items made during the Diwali snacks (faral) menu. It is prepared usually with various combinations of rice flour, split chickpeas flour, Black gram (Urad dal) flour, roasted gram flour etc and spiced up with Chilli powder, Carom seeds , Asafoetida, cumin, garlic etc. There are some recipes, which require soaking and grinding to make the flour. The good news today is you don’t need to do all that for this recipe!! This is an instant version!!

The common mistakes people do is with the proportions of the flours and the quantity of butter added to the dough. So please stick to the measurement to get perfect crispy murukkus and follow my notes at the end of the recipe card. The addition of pottukadalai makes this murukku very crispy and light with very little butter. Generally this murukku is made without any chilli powder so it will turn only light golden brown colour.

Now comes the climax for this recipe, I got everything ready and the star shaped disc was missing. I tried searching but couldn’t find it. I cannot leave the dough for very long once it was mixed. I was running out of time. I only had the below 3 shapes, and chose to proceed with the thick Sev disc.


👉👉🌺My Tips:
🌺Make sure to sieve flour before using.
🌺Do not add more than the recommended quantity of butter, otherwise they will disintegrate when added to oil.
🌺Do not knead the dough too hard or too soft.
🌺You can replace cumin seeds with Carrom Seeds (ajwain/Omam/wamu).
🌺If dough is hard & stiff, murukkus will break while shaping them. In that case, just add a few drops of water and knead the dough again.
🌺If the dough is too soft, murukku will absorb a lot of oil.
🌺Use any shaped disc to make murukku.
🌺Make sure the oil is hot enough while adding murukku. Reduce heat once you add murukku into oil and fry over medium low heat. Patience is the key to crunchy murukku.
🌺Do not over crowd the pan while frying, the oil temperature will drop & they will absorb a lot of oil & will also not cook evenly from inside.
