Cultured Berries


(Culture any berry except strawberries)

Makes 1 quart

4 cups fresh berries (blackberries, blueberries, raspberries, boysenberries, or a mixture)
2 tsp sea salt
¼ cup coconut palm sugar or honey
¼ cup lemon juice, whey, or vegetable starter culture
Purified water as needed to fill jar.

Wash berries and place in a large bowl; combine them with all remaining ingredients except water.  Spoon berries into the clean jar and mash them down with a wooden spoon.  Add enough filtered water to the jar to bring the level of the liquid to the top of the berries and at least 1 inch below the surface of the jar.  Cover tightly and leave at room temperature for 2 days.  After 2 days, transfer to the refrigerator for long-term storage.  Use within 2 months.  


Cultured Berry Smoothie:

1/2 cup cultured berries with juice

1/4 cup yogurt (I used kitehill almond milk yogurt)

1 T Honey

1/2 cup water

1/2 – 1 cup ice

Blend all in the blender, except ice.  Once blended well, add ice and blend again.
