INGREDIENTS 16lb Turkey Turkey Brine Brine BBQ Meat Rub 2 Sticks butter 1c Maple Syrup 5 gallon bucket Water STEPS Defrost Turkey (if needed) Defrost Turkey over 3 days Brine Add brine into 5 gallon bucket Add water and mix fully Place turkey into brine for 24-36 hours Dry Turkey Remove turkey from brine and pat dry Spatchcock turkey by cutting out the back bone Cut the turkey internal breast bone until turkey lays almost flat Pat turkey dry outside and inside Allow to dry in fridge for 24 hours Injection Remove turkey from fridge Melt butter and mix with maple syrup and 3Tbsp Rub Season inside of turkey liberally with rub Season outside of turkey liberally with rub Inject turkey with 90% Butter syrup mixture Smoke Preheat smoker to 325 Smoke Turkey for 1 hour Baste with injection Smoke Turkey for another hour Baste with injection Smoke Turkey until deepest breast temperature reads 165 Remove and let rest 1 hour Carve and serve
