My simple, easy and ready in under 20 mins Chickpea Pilau is perfect for busy schedules and goes perfectly with just about any curry.

Prep time - 5mins
Cooking - 20mins
Feeds approx. 4/6 people dependant on portion size
Ingredients:
2 cups basmati rice - 500g
3 cups of boiled water -750ml
1 can of pre cooked chickpeas - drained
1 small onion finely sliced
1 fresh tomato roughly chopped
1/4 cup oil
1 tablespoon salt
1/2 tablespoon cumin seeds
3 bay leaves, 2 cinnamon sticks & 2 black cardamom pods
1/2 a piece of frozen ginger & garlic cubes or 1/2 tablespoon of paste
