One of my most favorite meals is Chicken Tortilla Soup. It’s fairly simple to make, filling, relatively healthy (if you take it easy on the toppings), and is bursting with flavor! After preparing the soup, it’s straightforward to pressure can it and have on hand for quick meals in the future. Not to mention… it is DELICIOUS!

INGREDIENTS:
olive oil
3-5 large chicken breasts (boiled and shredded)
1 large diced onion
3-5 minced garlic cloves
1-2 diced jalapeños
2 cups diced carrots
2 cups sliced celery
3-4 cans kidney or black beans (or a combination)
1 quart crushed or diced tomatoes
20 ounces rotel tomatoes
2-3 quarts chicken broth
corn (can be excluded)

SPICES:
2 tbls paprika
2 tbls powdered garlic
1 tsp canning salt, plus more to taste as needed
1 tsp black pepper, plus more to taste as needed
1 tsp powdered jalapeño
1 tsp chili powder
1 tbls cumin

OPTIONAL TOPPINGS:
cilantro
sour Cream
shredded cheese
diced onion
tortilla chips
lime wedges
avocado slices

Pints: Process for 75 minutes at 10lbs (0-1000ft elevation; above 1000 = 15 lbs)
Quarts: Process for 90 minutes at 10lbs (0-1000ft elevation; above 1000 = 15 lbs)
