Yummy Chinese Home Cook Dish for your family!
This deep fried brinjal make a good appetizer for your family dinner! Coated with home made batter, deep fry it then toss with some chili, garlic, green onions. If you like it more spicy, you can use Bird's eye chilli!
CHOPPED GREEN ONION 青葱切碎 (1 STALK)
DICED RED CHILLI 红辣椒切粒(1/2 PC)
MINCED GARLIC 蒜切碎 (3 CLOVES)
MEDIUM SIZE BRINJAL 中型茄子 (1 PC)
CUT INTO QUARTERS 切条
SOAK INTO SALT WATER 浸盐水
TO PREVENT FROM TURNING BROWN 防止变黄
BATTER
FLOUR 面粉 (80g)
RICE FLOUR 粘米粉 (30g)
WHITE PEPPER 胡椒粉 (1/2 TSP)
SALT 盐 (1 TSP)
CHICKEN STOCK POWDER 鸡精粉 (1/2 TSP)
BAKING POWDER 泡打粉 (1 TBSP)
ICED WATER 冰水 (150ml)
OIL 油 (1 TBSP)
MIX WELL 拌匀
PREHEAT COOKING OIL OVER MEDIUM HIGH HEAT 中大火热油
DIP IN BATTER 沾上面糊
DEEP FRY TILL GOLDEN BROWN 炸至金黄色
DRAIN AND SET ASIDE 捞起沥干备用
DRIZZLE SOME BATTER INTO OIL TO MAKE CRISPY CRUMBS 倒点面糊炸成脆粒
COOKING OIL 油 (1 TBSP)
STIR FRY GARLIC, CHILLI & GREEN ONIONS 快炒蒜,辣椒&青葱
ADD IN BRINJAL 加入茄子
FEW PINCHES OF SALT & PEPPER 一点盐&胡椒粉
TOSS 翻炒
