Homemade Skirt Steak Gyros

Had a bad day yesterday,
Had a bad day yesterday, finding out a very good friend had passed away,.
My plan, before it went completely sideways, was to trim a skirt steaks Dave from High Tide Farm gave me, halve it, and do two different things.
1. Skirt steak gyro.
2. Skirt steak with pesto butter, asparagus and polenta fries.
Of course, nothing happened, ‘cuz shitburger day.
Today, frankly, I wasn’t motivated, but I had to do something to occupy myself. Even if I wasn’t exactly burning with desire. I figured the Greeks do tragedy and suffering well, so gyro it was.
Very tasty, will make again, show more stuff.
Dave’s beef? Stellar. Really good, soooo much flavour.

Housemade fresh steam-fried Greek pita; flour, water, yeast, sugar.
Meat marinade; olive oil, minced garlic, fresh oregano, fresh mint, smoked paprika, salt & white pepper.
Used portion of marinade with 4%mf Greek yogurt & splash of water for housemade Tzatziki.
Charred onions
Charred green bell pepper
Blistered cherry tomatoes (olive oil, salt, brown sugar, rosemary, lemon balsamic vinegar, garlic)
