Today's episode is an introduction to the unique world of Meitei cuisine. It features two of the most favourite dishes that adorns any celebratory spread be it at the home or outside.
To give us a deep dive into the culinary realm of Manipur's dominant Meitei cuisine, our gracious and charming host Ammo invited us for a special home meal at his homestay.

Apart from being a phenomenal travel and tour entrepreneur, Ammo is also a hardcore foodie and a great cook. He skillfully demonstrated the intricacies of preparing this traditional delicacy, sharing stories that breathed life into each step. Yen thongba is a distinctively flavourful chicken curry that is whipped up with onions, garlic, ginger, culantro, heiribob etc. The flavors came alive, reflecting the rich heritage of Manipur's dominant culinary tradition.

Ammo's enthusiasm made us even more eager to learn about the second dish eromba. It is a spicy mash made of varying ingredients like fresh herbs, ngari etc. This one was soibhum eromba which is made with fermented bamboo shoots, potatoes, ngari and a bunch of herbs. As he unveiled the dish, the inviting aroma captivated our senses.
With a deft hand, Ammo guided us through the intricate steps of preparing this delightful side dish. He shared the stories behind its significance in Meitei culture, adding a touch of nostalgia and deeper meaning to each ingredient and technique.

**Despite the ongoing ethnic conflict in Manipur, we made a conscious yet hard decision to proceed with our food video series from the state which was filmed between 30th Jan and 3rd feb 2023.

Our intention was to showcase the incredible warmth, love, kindness, camaraderie and enthusiasm we encountered during this immersive visit.

It's essential to acknowledge the complexities the state is going through, but we firmly believe in highlighting the genuine goodness of the people whom we met during this wonderful journey.

Throughout the five-day tour, we encountered a heartwarming display of hospitality, generosity and harmony. We want to reassure that our approach remains sensitive and respectful towards the ordeal being faced by the people of Manipur.**
