Can You Beat Dark Souls 3 With Only Sorcery?

I try to beat Dark Souls 3 using only sorcery, even though this is a game based mostly on melee combat. This challenge run should be doable, since this game allows you to regain mana using ashen estus flasks, meaning you can cast as much as you want, you just have to not get hit.
I didn't know if a tutorial video or a challenge video that assumes you know the game was better, so I did a bit of both.
