On Friday we were lucky enough to catch a keeper sized Scamp Grouper. Normally we get them 1/2" short so to get a keeper was nice. They get very large but usually live out in deeper water. I was told they are very good quality fillets so I decided to make sushi. The fillet was nice and firm with a very white color. Minimal bloodline. The next time we catch one I am going to make the Ponzu Mango salsa dish again to serve as an appetizer at a party. That was my favorite, and doesn't require me having to try to master a sushi roll again 😂
