My mom usually cook this kind of fried chicken when I was a kid. So I asked the recipe and I want to share you how to cook it. Because it is simple to cook but very very flavorful, trust me. You can taste the saltiness of patis(Fish Sauce) and sourness of calamansi(Philippine Lime). For this recipe I wanted to use thigh part because it's juicy. But you can use other parts if you want.

RECIPE:

1.5kg Chicken Thigh or Drumstick or Quarter Part
1cup Patis (Fish Sauce)
4cups Water
22pcs Calamansi (Philippine Lime)
to taste Ground Pepper

*After you simmer the chicken, it is important to let the chicken dry before frying. To achieve crispiness of the skin, I know we all want that when eating.
