Garlic Scape Pesto for the Freezer | Preserving the Harvest

One of my favorite ways to preserve garlic scapes is by making and freezing this easy garlic scape pesto. It freezes really well and we enjoy this all year long

Garlic Scape Pesto:
50 garlic scapes or 5 cups garlic scapes in 1 inch pieces
2 cups shredded parmesan cheese
2 cups fresh basil
2 cups toasted walnuts or pine nuts
1 cup olive oil
juice of 1 lemon
salt to taste
