Use a Sous Vide and never overcook a steak again.  Super simple recipe guaranteed to turn out on point.

INGREDIENTS
1 lb sirloin steak (1 ¾” thick)
Killer Hogs AP Rub (or salt & pepper)
Killer Hogs Steak Rub
2 tbs butter
2 tbs olive oil

DIRECTIONS
1-season steak with AP Rub (or salt & pepper)
2-place steak in zip-lock bag & add 1 tbs olive oil
3-seal bag (vacuum seal if able to, but not necessary)
4-set sous vide for 125° (med-rare)
5-should take a 1 lb steak around 1 hour to reach 125°
6-preheat cast iron skillet on grill or burner to 450°
7-add 1 tbs olive oil & 2 tbs butter to pan
8-once butter is melted, add steak to pan
9-do not move steak around, but spoon juices over steak
10-flip steak after searing for 1 minute
11-spoon juices over steak again
12-add steak butter compound and shut grill lid  (2 tbs butter, 1 minced garlic clove, 1 tsp chopped parsley)
13-pull steak after both sides have been seared for 1 minute each
