There are three types of yeast:

Fresh yeast is least widely available and is not sold in supermarkets, but can be bought online. It comes in small beige blocks that feel creamy to touch. They should smell fresh and not feel dry.

Fast-action dried yeast, sometimes called ‘easy blend’ yeast is widely available. It’s the easiest yeast to use as it requires no preparation.

Dried active yeast is available from most supermarkets but it takes a little preparation before you can add it to a recipe.

When deciding how to use yeast, always follow your recipe and use appropriate measurements of ingredients. Once you’ve learned how to activate yeast, you’re ready to take on any bread or baking recipe which requires yeast.
