Let’s Create! Pescado en escabeche is a very easy to prepare Puerto Rican fish dish. It is cooked and the served cool, preferably the next day.

INGREDIENTS

For Fish:
* 2-3 pieces of fish cut in rounds
* 1/8-1/4 tsp black ground pepper
* 1/8-1/4 tsp cumin
* 1/8-1/4 tsp colander  
* 1/8-1/4 tsp salt
* 1/8-1/4 tsp smoked paprika
* Squeeze of lemon
* Frying oil

For the Escabeche
* 1 white onion
* 1/4 cup pimientos morrones or red bell peppers
* Tsp cloves
* Tsp black peppercorns
* 1 1/4 cups of extra virgin olive oil
* Around 3/4 to 1 cup of apple cider vinegar
* Olives without pits
* 2 bay leaves
* 2-3 garlic cloves
