Indulge in a delightful twist on the classic apple pie with this recipe featuring a light and flaky phyllo dough crust. With its crispy layers and tender apple filling infused with warm spices, this dessert perfectly harmonizes textures and flavors.
Ingredients:
8-10 sheets of filo pastry
2 medium-sized apples, peeled, cored, and thinly sliced
70g erythritol (or 50g sugar)
1 teaspoon ground cinnamon
Pinch of salt
3 eggs
200g Greek yogurt
4 tablespoons of melted butter
Instructions:
Preheat your oven to 350°F (180°C). Grease a 9-inch pie dish or tart pan lightly with butter or cooking spray.
Fold two filo sheets together and place the folded pair on the tray. Repeat the folding procedure with the remaining filo sheets until all sheets have been folded.
Arrange the folded filo sheets evenly in the prepared pie dish to form a base.
Insert the thinly sliced apples into the folds of the filo sheets, ensuring they are evenly distributed.
In a bowl, whisk together eggs and Greek yogurt until smooth. Add a pinch of salt, a teaspoon of cinnamon, and erythritol (or sugar). Mix until well combined.
Pour the yogurt mixture evenly over the folded filo pastry and apple slices.
Place the pie in the preheated oven and bake at 350°F (180°C) for about 30 minutes, or until the filling is set and the filo pastry is golden brown.
