LUMPIANG GULAY RECIPE | Crunchy Lumpiang Togue  | Filipino Vegetable Roll | PINOY SIMPLE COOKING

Lumpiang Togue or Vegetable Spring Roll is regarded as the most basic type of lumpia in Filipino cuisine. It is a deep-fried appetizer or can even lunch and dinner consisting of a mixture of shrimp, tofu and vegetables wrapped in a thin egg crêpe (also called egg roll wrapper).

There are various ways of making lumpiang togue. It can be lumpiang togue with tofu, lumpiang togue with shrimp, lumpiang togue with pork, lumpiang togue with different vegetables. But one thing is for sure, this lumpia, what ever way it is made, is great to eat dipped in a vinegar with chili sauce. It is so good.

Sharing with you another way to cook Lumpiang Togue and how to make it so crunchy up to the last bite.

Lumpiang Togue Recipe:
Lumpiang Togue:
Ingredients:
1/2 lb shrimp - shelled, deveined and chopped
1/2 lb tofu - fried and chopped
1 large onion chopped
7 cloves garlic minced
1 large carrot cut into strips
2 cups green beans - diagonally cut into strips
1 lb bean sprouts
1 tbsp oil
2 tbsp oyster sauce
1/2 tsp salt
1/4 tsp pepper

For paste used to seal the wrapper:
2 tbsp flour
2 tbsp water

Directions:
1. In a pan, heat oil over medium high heat.
2. Add onion, cook until translucent.
3. Add garlic, cook until lightly brown.
4. Add carrots, cook until slightly tender.
5. Add green beans. Cook for 5 mins.
6. Add bean sprouts, salt, pepper and oyster sauce.
7. Mix gently until well combined and cook for 3 mins.
8. Lower the heat, add tofu and cilantro.
9. Set aside and let it cool.
10. Prepare the flour mixture, in a small bowl mix 2 tbsp flour and 2 tbsp water. Use this to seal the wrapper
11.. Separate wrappers into individual sheets and lay on a flat working surface. If wrapper is square-shaped, form a diamond shape with one pointed corner facing you.
12. Spoon about 2 tbsp of vegetable mixture put at the lower end of the wrapper, closest to you.
13. Fold the bottom of wrapper over the filling. Then fold both the side corners over the center to close the sides. Continue to roll tightly. Roll the filled portion over until the other end of the wrapper.
14. Dip your finger in the slurry and pat it on the remaining corner to close and seal the spring roll completely.
15. Repeat with the remaining mixture.
16. In a pan, heat about 2-inch deep of oil at 350°F. Add lumpia in batches and cook turning on sides as needed, for about 3 to 4 minutes or until golden brown and crisp.  
17. Drain oil from the spring rolls by placing them on strainers or colanders.
18. Serve with your favorite dipping sauce.

Note:
** Do not cook on very high heat, it will burn the wrapper.
