Gujarati Bharwa Baingan Kathiawadi Style | Baby Eggplant Curry | Ami's Cooking
This spicy bharwa baingan is the flavor of Kathiawad part of Gujarat. The uniqueness of this curry is it's spicy, sweet & Sour taste. It can be served with any Indian bread like naan, roti, puri etc. as well as it goes well with khichadi. Please see the ease of making this recipe in my video. Gujarati Bharwa Baingan Kathiawadi Style Making :
Masala Making Ingredients :
4-5 Garlic Cloves
1/2 Tsp Ginger Paste
1/2 Cup Any Besan Namkeen
1/2 Tbsp Coriander Powder
1/2 Tbsp Pickle(Aachar Masala)
Salt To Taste
1/4 Tsp Garam Masala
2 Tbsp Desiccated Coconut
1/4 Cup Peanuts
1/2 Lime Juice
Red Chili To Taste
1/2 Tbsp Jaggery
Method Of Making Masala :
Just combine all the above ingredients and grind coarse.
Curry Making Ingredients :
1/2 Tsp + 1/2 Tsp Salt
8 -9 Baby Eggplants
1 Green Chili Cut
1 Bunch Coriander Leaves Chopped
2 Medium Onions Diced
1 Cup Yogurt(Curd)
1/3 Cup Oil
1/4 Tsp Cumin Seeds
1/8 Tsp Carom Seeds
1/4 Tsp Asafoetida
1/2 Tsp Turmeric
Red Chili To Taste
Method Of Making Curry :
1. Add 1/2 tsp salt into 2 cups of water. Give two cross slits to eggplants and add into water.
2. Cur Green chili, chop coriander and dice onions.
3. Take yogurt and whisk well. Add 2 tbsp prepared masala and combine with yogurt.
3. Dry eggplant. Heat a pan on medium flame. Add oil and fry eggplant on all sides by flipping. Remove from oil and keep until ready to use.
4. Add cumin seeds, carom seeds and asafetida into oil and let it splatter.
5. Add onions and sauté until lightly golden by covering and stirring. Add 1/2 Tsp salt in between.
6. Add turmeric and red chili powder and stir well.
7. Add yogurt and stir continuously and add lots of coriander.
8. Stuff fried eggplant with prepared masala and put on the gravy.
9. Also add green chili.
10. Cover and cook 4 minutes on low flame.
11. Garnish with coriander. Eggplant is ready.
12. Serve gravy first and put eggplant on the top to avoid breakage.
