To Make Masala Paste

Ghee - 1 Tbsp
Oil - 1 Tbsp
Whole Spices
( Cinnamon, Cardamom, Cloves, Cumin Seeds )
Garlic - 8 Cloves
A Piece Of Ginger
Green Chilli - 5 Nos
Cashew Nuts - 8 Nos
Onion - 3 Nos
Water

To Make Methi Malai Matar

Butter
Ghee - 1 Tbsp
Fenugreek Leaves
Green Peas
Ground Paste
Salt - 1 Tsp
Water - 1/4 Cup
Fresh Cream - 1/2 Cup
Kasuri Methi

Method:

For the Malai:
1. Take ghee and oil in a pan. Add the whole spices. Saute.
2. Add in the garlic cloves, ginger and green chillies. MIx well.
3. Add in cashewnuts and onions. Mix it all well and saute.
4. Once the onions slightly turn golden brown in colour, turn off the stove and cool the ingredients.
5. Then put them in a mixer jar and grind into a paste. Add water and grind it into a fine paste.
6. Keep this masala paste aside.

For Methi & Matar prep:
1. Take butter in a pan.
2. Add in the fresh methi leaves and saute until they are no more raw.
3. Then add in the fresh cooked green peas.
4. Mix and saute them for about 2-3 mins. Remove them from the pan and keep aside.

For the Methi Malai Matar Curry:
1. Take ghee in a pan and add the ground masala to it. Mix it all.
2. Saute for a while and add in the salt.
3. Mix and add water. Cook on a medium low flame.
4. Once the gravy is nice and creamy, add in the sauteed methi leaves and matar.
5. Mix well and add fresh cream. Mix it all again.
6. Cover the pan with a lid and cook the curry for 5 mins.
7. Once the rawness is all gone and curry is ready, sprinkle some crushed kasuri methi.
8. Mind-blowing Methi Malai Matar curry is ready to be served with phulka, roti or any mildly flavoured rice of your choice.

As the name suggests, the base ingredients are methi leaves and matar; these two are cooked in a rich white gravy which is irresistible. Methi for this recipe can used in the dry form as well as fresh, I chose the latter. This curry is mild in taste. It goes well with roti, phulka, chapati and even mild flavored rice recipes like Jeera Rice, Matar pulao etc. The key to perfecting this dish is in the preparation of masala I.e., the gravy.
