Eel-grass is one of the special greens of Western Region. It's being called water eel-grass because it grows under water, in the alum fields, the roots grow deeply in the mud.
Water eel-grass only grows in couple of months during high-water season, so the people here consider it "a dainty morsel given by God", it's not easy to be found in anywhere else.
A bunch of fresh and green eel-grass, wrap it up and dip in stewed fish sauce, or stewed anabas with pepper and fish sauce, is excessively tasty.
I am in Tan Thanh, Long An. Today, the local people and I will take you to the fields to harvest water eel-grass, wait for me, it's really fun.
