WHOLE GRAIN FOODS: what does it mean to be whole grain and what are the health benefits?

Have you been buying whole grain foods, but aren't really sure why?

Maybe, you had an inkling they're somehow healthier than other grains?

Well, you would be right. Here's why.

For a product to be considered whole grain, it must contain all three parts of the grain kernel: the bran, germ, and endosperm. More refined grains like white bread and white rice only contain the endosperm, which leaves out key nutrients found in the bran and germ.

For example, the bran contains fiber, antioxidants, B vitamins, and minerals .

The germ is made up of essential fatty acids, vitamin E, antioxidants, and several B vitamins.

The endosperm is the largest part of the kernel, and acts as an energy source for the seedling by providing carbohydrates and sugars.

Remember, refined grains only contains the starchy endosperm, so we miss out on all the nutrients in the bran and endosperm.
