Eggless Rose Cookies Recipe
Eggless Rose Cookies is a sweet, crispy deep fried, cookie like snack made with all purpose flour, coconut milk and sugar.  It is similar to the Swedish Rosette Cookies and is traditionally made during Christmas in India.

Rose Cookies are most commonly made in the Southern States in Kerala, Karnataka, Chennai as well as in Goa.  They are made with special mould known as Achu which is made traditionally from cast iron but is now available in non-stick also.  These mould comes in different shapes such as flowers and stars.

Ingredients:
All purpose flour 3 cup
Rice flour  2 cup
Sugar   1 cup
Coconut Milk  one coconut grated and extracted milk 3 cups
Sesame seed black 2 tbs
Salt   ¼ tsp
Method:

Mix all the above ingredients in a bowl and mid well add coconut milk little by little and make batter as dosa consistency.  And keep aside for 2 hours after that if required add coconut milk or water and the consistency should be that the if you dip spoon in it then it batter should coat nicely back side of the spoon.  Batter should not be too liquidy not too thick.
Oil for deep frying –
In a kadai add oil and keep on high flame.  Also keep the achappam mould in the oil.  When oil is hot and the mould is hot dip the mould ¾ th into to the batter and dip it into to the oil it will automatically demould if the mould is seasoned . keep the flame on medium low.  and fry it both side till pinkish in colour and take it out.
If the mould is new then some times first 2-3 times it will spoil then it will come properly. (for seasoning you have to keep the mould in oil for overnight).
Please note that every time you dip the mould into the batter the mould should be nicely hot so that you have to keep the mould in oil, then dip into the batter.
Rose cookies or achappam is ready.
