Written instructions:
I create a regular star, you can use any shapes. Path / Object to path toturn the object to path, you don't need to do this if you started with a path.
With Node tool (N) select two nodes where you want a split. If there are no nodes there, select the path first and then double click where you need new nodes to be. I use two inner corners of the star.
With only those nodes selected, use panel button 'Break path at selected nodes' or press Shift B. The nodes will change appearance but the path still lloks whole. Path / Break apart to split the path into two. You can color the pieces separately. Notice that there is no stroke on the cut line.
For the 2nd method make a line of two nodes (or more, it doesn't have to be a straight line) that is over the star and sticks out from the sides. It usually works well if the edges are snapped to the star path but making it longer is a safe choice. Path / Division to cut the lower object (the star) with an upper object (the line). Division created closed paths with stroke visible on all sides.
Cut path works similarly: it uses a line or a shape to cut along. It only cuts the stroke and removes the fill but fill can be added back later. The result is very similar to the first method after coloring.
With methods 1 and 3 you can easily join the shapes back because paths are broken on the cut line and end nodes are created. To join, select both paths, select two end nodes and use a 'Join selected nodes' button or keyboard shortcut Shift J.
