Chipotle chicken marinade (for 6 chicken thighs) :
1-2 chipotle peppers in adobo sauce + 1-2 tbsp adobo sauce
1 tsp ground cumin
4 garlic cloves
1 tsp dried oregano
2 tsp sea salt
1/4 tsp black pepper
1/2 tbsp chili powder
2 tbsp avocado oil
3/4 cup water or chicken broth
Chicken quinoa soup:
2 tbsp avocado oil
1 lb chicken drumstick
Filtered water (about 5 cups)
Bay leaf
Parsley (for stock)
4 garlic cloves, minced
1 sweet onion, diced
3 carrots, diced
3 stalks celery, diced
1 tsp poultry seasoning
3/4 cup uncooked quinoa, rinsed
Juice of 1 lemon
